Warm weather means picnics, barbecues, and the exquisite taste of the Great Outdoors. Summer months are filled with family get-togethers, fun in the sun, and lots of barbecues and outdoor cooking. The first sign of the sun means to pull the barbecue grill out of the garage and get it ready for some yummy, grilled meat.
Chicken is a popular choice for grilling chefs. Grilling chicken on the barbecue makes a tasty main dish for any meal. Most people grill either skinless breasts of chicken or pieces. Before putting the chicken on the grill it is a good idea to trim the excess fat, this will prevent fat from dripping off and fueling your fire.
One problem you may run into is the meat drying out from the high temperatures (when grilling chicken use a slightly lower temperature). Chicken usually cooks better on medium for about 25-35 minutes depending on the thickness of your meat. There are a couple of steps you can take to prevent your chicken from becoming too dry. One, you can use a thick marinade sauce or a light coat of cooking oil that will insulate your chicken and keep the moisture from escaping.
Marinade or a thick sauce tends to work better and add more flavors to the meat. Another thing you can do to prevent the meat from drying out is to cook the pieces or breasts of chicken in a foil bag with a marinade of sauce. The foil bag will help to keep in the moisture.
You can buy hot bags at the supermarket; they are heavy-duty foil bags that are great for grilling chicken, other meats and vegetables. Whichever method you decide to use make sure you keep an eye on your meat because if it is not rotated it can burn.

Keep your grill clean, ALWAYS ” the racks on your barbecue can get dirty and have excess food on them. Scrap off all of the leftovers after cooking; if you do it while it is hot it makes it easier to clean off.
Use cooking spray of low fat oils to coat the grate on the grill before placing the meat on it. This will help prevent the food from sticking (especially when cooking low fat meats)
Watch your grill in order to control any flare-ups and to properly rotate the meat.
Place your grill out in the open away from structures or any flammable substances. Do not allow young children to play around at hot barbecue.
Marinade of add spices and seasoning to your food at least an hour before you put it on the grill so the flavor will sink into the meat.
Use the proper tools for barbecuing. If you are using something that is too short and you get too close to the heat then you will have a good chance of getting burned or injured.
When cooking on a barbecue grill the best advice is to use common sense. Know how to use the grill properly before attempting to operate it.
